Rosy's Cilantro Rice

Rosy's Cilantro Lime Rice

2 teaspoons canola oil
3 cloves garlic, minced
1 onion, chopped
1 cup long-grain rice
1 teaspoon kosher salt
Juice of 1 lime (more if not juicy) and zest of 1 lime
Almost 2 cups low-sodium chicken broth (make 2 full cups of liquid with broth and lime juice)
Chopped fresh cilantro, for garnish OR add a teaspoon of dried cilantro with liquid during cooking

Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Add the rice and cook over a medium heat, stirring constantly for 3 minutes, or until rice is slightly browned. Add the 2 cups of liquid, zest and salt and bring it to a boil. Reduce the heat to low, cover and simmer for 20 minutes. Do not take off cover during cooking. Fluff when done.

Just before serving, top with chopped cilantro.
