Rosy's Red Rice



Chop onion and garlic. Swirl olive oil into a skillet or saucepan. Heat on medium/high. Add rice, garlic and onion and stir frequently until browned. Add the liquid and salt. Bring to a boil, cover reduce heat to lowest setting and cook for 20 minutes. For best results, let stand a few minutes before fluffing and serving.

HACK: Instead of chopping garlic and onions, brown the rice only and add 1/3 cup of your favorite salsa to the total liquid.

This amount serves 8. For 2, reduce rice to 1/2 cup and liquid to 1 cup. Reduce tomato sauce to about 2 tablespoons. Reduce salt, onion and garlic to taste.
